We know healthy eating plays an important role in keeping your body healthy and strong, as
well as preventing illness. So why’s it important to eat well? We can get more out of life, feel
better and live longer by eating healthy food. Eating well:
1.
Improves our body weight and shape, blood pressure and
cholesterol levels
2.
Gives us more energy to get through our day
3.
Reduces the risk of developing diseases such as heart disease, diabetes, certain cancers and
osteoporosis
4.
Ensures bone strength, good oral health and protection from infections
5.
Helps us to stay a healthy weight, and so avoid other health problems associated with being
overweight including infertility, impotence,
stress and sleep problems
6.
Builds the foundations for healthy growth, development and learning for babies and
children.
A very small study from 2012 found that 13 men who drank just one glass of beet
juice temporarily lowered their systolic blood pressure by an average of 4 to 5 points. (Note:
the study was funded by a beet juice manufacturer.) Another study published in
Hypertension in 2008 (which didn't receive funding from beet-juice makers) found that folks
who drank the red root juice had a 10 mm Hg drop in blood pressure and less blood
clotting
three hours later, compared to those who drank water. Because beets are rich in nitrates,
which the body converts to nitric oxide—a compound that relaxes and dilates blood vessels,
turning them into superhighways for your nutrient- and oxygen-rich blood. That means better
circulation, and possibly lower blood pressure.
Eating a high amount of cruciferous vegetables has been associated with a lower risk of cancer;
particularly lung and colon cancer. Studies have suggested that sulforaphane, the sulfur-containing
compound that gives cruciferous vegetables their bitter bite, is also what gives them their cancer-
fighting power. Sulforaphaneis now being studied for its ability to
delay or slow cancer with
promising results shown in melanoma, esophageal, prostate, and pancreatic cancers.
Vitamin C is a water-soluble vitamin that has many functions in the body. Vitamin C is needed to
bolster the immune system. It is an antioxidant that protects LDL cholesterol from oxidative
damage, and it is needed to
make collagen, a substance that strengthens many parts of the body,
such as muscles and blood vessels. Our bodies do not make vitamin C, so we must get it from
dietary sources. Citrus fruits, carrots, avocados, and spinach all have vitamin C.
Bell peppers, like
the ones shown in Figure 1, below, also contain vitamin C.
