“Palov” A main course typically made with rice, pieces of meat, and grated carrots and onions.

Plov is the symbolic food of Uzbek cuisine and a part of mentality. It is prepared in every family of Uzbekistan, whether Uzbek, Russian, Tatar of Korean. There are a over thousands of recipes of plov but traditionally it is cooked from rice, mutton and carrots. A few centuries ago plov was cooked within rich families once a week - every Friday eve. For the poor people plov was an infrequent dish which was served only during big holidays. A respected guest would be served with plov and tea. Uzbek plov is nationally admitted by UNESCO and registered into Guinness book. The national character of the Uzbek people can be best perceived through tasting Uzbek plov like the pudding for the English.

1	Atlas	The name of Atlas comes from the process it is made. The paints are brushed on the cloth “las” and steadily colored, as a result colored las is formed. Atlas is a traditional national cloth of Uzbeks which is commonly worn in the national holiday “Navruz”. Atlas glitters in different colours which presents the variety of nature. Atlas is valued expensive cloth, because it is manually prepared by local women of Margilhan from natural paints. Each of Atlas has a unique color, therefore, it is impossible to find the same color again. Women in Fergana Valley match pieces of colored clothes with the help of wooden stick. It is a long process but workers do not notice this. They friendly converse with one another about news or daily chores during these hours.
