Sherkat F, & Halmos A L, 1997, Thermal Processing: An Integrated Approach, (New), This project is funded by RMIT LearnT Fund (higher Education) and invovles the development of a multi-media interactive CD-ROM comprising a simulation of thermal processing, and a database on its relevant concepts.The package will help students in Food Technology course to better learn these concepts, solve industrial problems and develop a 'Process Schedule', then use it to actually produce the product in the pilot plant, and justify the product safety and 'legality'.

Sherkat F, Mason C, & Raymond B, 1997, Quality factors of fetta cheese as a function of ingredients and production method., (New), Australian fetta cheese made from cow's milk does not enjoy the same popularity as its imported rivals, the Bulgarian and Greek fetta cheeses. In order to elucidate the factors involved in cheese qulaity, several ingredient and production method combinations will be tried. A method for texture profile analysis (TPA) of fetta cheese will be developed and the results will be compared to those obtained from sensory evaluations.
