INTRODUCTION


Тhe aim of the research work are processing of plant raw materials and obtaining of extract containing inuline, obtaining fructose syrup from it by processing, processing of content and technology of dietary sweet canned products based on it.
The object of the research work are the tubers of Jerusalem artichoke, its juice, Saccharomyces cerevisiae yeast and Aspergillus oryzae fungi, mineral and organic acids, natural sour fruit juices.
разработаны состав и технология производства консервов на основе фруктозного сиропа клубней топинамбура.
Scientific noveltyof the research work consists in the following:
It is defined the conversion of inuline, effected by the action of enzymes of microorganisms: yeast Saccharomyces cerevisiae and fungi Aspergillus oryzae;
It is defined hydrolyzationality of inuline, containing in tubers of Jerusalem artichoke, fruit juices, which rich in organic acids;
It is defined content of dietary sweet canned products and natural blended juice;
There are defined dynamic characteristics of the changes: during fermentation of biomass by the producers of yeast Saccharomyces cerevisiae and fungi Aspergillus oryzae in the culture liquid in pure extractive medium of tubers of Jerusalem artichoke and environment enriched with mineral salts, fructose formation under the influence of enzyme inalase, changes in proteins in the substrate, changes in the degree of acidity of the medium by time;
There are processed composition and technology of canned products based on fructose syrup by tubers.
Introduction of the research results. On the results obtaining by improving technology of dietary canned products based on fructose syrup:
The technology of fructose syrup production from tubers is introduced at the enterprises «Namkon» (Certificate from the Holding Company «Uzbekoziqovqatxolding» №AK/11-3452 from 13.10.2017). As a result, it became possible to increase efficiency of production based on dietary syrup from tubers by 18% by comparary with traditionally raw materials;
The technology of sweet canned products based on fructose syrup of tubers is introduced at the enterprises «Shokirzhon-Shavkatjon hamkor» (Certificate from the Holding Company «Uzbekoziqovqatxolding» №AK/11-3452 from 13.10.2017). As a result, it became possible to increase by 16% quality and efficiency technology of production on the comparary with traditionally;
The technology of sweet canned products, where is used fructose syrup of tubers as a replacer of sugar, it is introduced at the enterprises «Tillaxon» (Certificate from the Holding Company «Uzbekoziqovqatxolding» №AK/11-3452 from 13.10.2017). As a result, it achieved preparing dietary kind of canned products, it became possible to export on consumer market.
