The chromoproteid myoglobin is red, contains iron, and is red in meat. Myoglobin combines with oxygen to form oximioglobin.

When oxygen is exposed to myoglobin for long periods, brown methmioglobin is formed, so the meat changes from red to brown when stored in the open air for a long time.

Myoglobin denatures at 600C and loses its red color.


Mioalbumin - acetone is easily separated from the plasma by water soluble in water and precipitates with NaCl. Deposits with ammonium sulphate. Mioalbumin and myoglobin make up 1 ... 2% of muscle tissue.

Myosin is an essential salt-soluble protein of muscle tissues, which absorbs water and has a water-retaining properties, making up about 40% of all tissue proteins. At the same time, we dissolve the water-soluble fractions of the muscle tissue 2.3 min and filter through 2 layers of gauze. The extracted filtrate is used to test the solubility of albumin. Water-washed sediment is removed to remove globulin.
