Today we will learn how to make soup with you

Necessary ingredients

  • 1 kg of rice
  • 1 kg of mutton
  • 1 kg of carrots
  • 300 ml of vegetable oil
  • 4 medium onions
  • 2 hot peppers
  • 2 heads of garlic
  • 1 tablespoon cumin
  • 1 teaspoon coriander seeds
  • salt to taste.

STEP 1

  • The rice is washed several times in clean water. The water left over from the last wash should be completely clear.
  • STEP 2
  • Wash the meat and cut it into cubes. Peel onions and carrots. Cut 3 onions into thin semicircles and carrots into 1 cm long straws. Peel a squash, grate it and squeeze the juice.
  • STEP 3
  • The pot is heated, filled with oil and continued to heat until lightly browned. Then add the remaining whole onion and fry until dark. It will be removed later.

  • Now it begins to prepare the top of the soup. Put the onion in the pot and fry until it turns golden (about 7 minutes). When the onion is fried, put the meat on top of the onion and fry it until it forms a crust.

  • At this stage, the carrots are stuffed and fried for 3 minutes without stirring. Then fry everything for 10 minutes, stirring occasionally.

  • Cumin and coriander seeds are crushed and added to the top of the soup. At this stage, the salt of the zircon is adjusted.

  • Reduce heat to medium and continue cooking until carrots are tender (another 7-10 minutes). Then add boiling water to 2 cm above the top, add two hot peppers, lower the heat and simmer for 30 minutes.

  • The rice is washed again and the water is drained. It is then spread evenly over the top. Raise the heat to maximum and pour boiling water over the rice until it is 3 cm high.

  • The rice is lightly beaten with a fork. If the sound is not loud, the rice is pitted to the bottom of the pot with a stick.

  • The rice is flattened, the lid of the pot is closed, the heat is lowered and the soup is infused for 30 minutes. The rice is ready! It can be decorated with quail eggs, lemon, hot pepper.
