What is vegetable oil?

  • Is a triglyceride extracted from a plant;
  • Any of a group of oils that are esters of fatty acids and glycerol and are obtained from plants
  • Any of various oils obtained from plants and used in food products and industrially.

Vegetable Oil

Properties:

The smoke point of vegetable oils vary and are higher for oils used for frying like canola oil (smoke point 242⁰) and safflower oil (smoke point 265⁰)

Types:

The different types of vegetable oils include palm oil, soya bean oil, canola oil, pumpkin seed oil, corn oil, sunflower oil, peanut oil, grape seed oil, sesame oil, argan oil and others.

Uses:

Vegetable oils are used for cooking, fuel, cosmetics, medicines and other industrial purposes.

Fat composition:

Coconut oil has the highest content of saturated fat (92%). Canola and sunflower oil have the least amount of saturated fats (6% and 9% respectively), but contain a higher percentage of monounsaturated fat (62% and 82% respectively)
