What are the interpersonal factors influencing the consumption of local food and 
beverages in the North of Iran as a tourism destination? 
Question 7 in the questionnaire indicates that interpersonal factors are very important to the 
tourists. Thus, it is suggested that more attention be paid to the training of the personnel 
because it is evident that friendly behavior of the personnel attracts more customers to the 
restaurants and also having educated and good tempered personnel will help customers to 
know more about the food they are having. 
As finding of question No.3: 

What are the cultural factors influencing the consumption of local food and 
beverages in the North of Iran as a tourism destination? 
The questions 1, 2, 5, 12, 9 in the questionnaire indicate that cultural factors have a 
significant role in attracting tourists to local food consumption. It is suggested that great 
effort be taken to protect and revive this factor as a cultural element. In fact, food is a cultural 
element like clothes, music and handicrafts. In case of clothes and music, it is suggested that 
the waiters, hosts and personnel should wear traditional clothes and restaurant managers use 
the traditional music in the dining halls. It is necessary to understand tourists' food culture 
and their eating habits, so that in catering, the food could be arranged according to tourists' 
habits and taste. In addition, food increases the national pride of the local community and 
helps revive the old less attended food and beverages. 
As finding of question No.4: 

What are the physiological factors influencing the consumption of local food and 
beverages in the North of Iran as a tourism destination? 
Questions 6, 8,3,11 indicate and approve a relationship between food consumption and 
physiological factors. According to the potential of food tourism and the young population of 
Iran, food tourism can play a remarkable role in reviving the customs and food habits and the 
young generation takes risks to test novel foods. So it is supposed that taking risk of having

this food among all levels of the society will help to revive and survival of these kinds of 
foods in the society.
