Substantiation and actuality of problems in the master`s dissertation.

Today, the use of the α-amylase enzyme in various industries is considered one of the most important issue both globally and locally. This is because there is a growing global demand for biologically active substances in the industry, including stable and immobilized α-amylase enzymes. Simultaneously, microorganisms are widely used as promising sources, and the production of such immobilized α-amylase enzyme preparations is one of the most pressing issues. The use of amylolytic preparates with relatively complete decomposition of starch in the industrial processing of various raw materials containing starch, the use of immobilized amylase enzymes isolated from microorganisms in various industrial processes creates the need to improve enzyme production technologies in our local industry. This, in turn, increases the cost-effectiveness of industrial production of the immobilized amylase enzyme.



Currently, bacterial amylase is mostly used in the production of alcohol, beer and confectionery products, in the production of glucose syrups, in the textile and paper industries to break down starch into carbohydrates. Purely isolated amylase is widely used in medicine, pharmaceuticals, food and scientific research. The enzymatic method has a number of advantages over the existing chemical hydrolysis methods of starch. Bacterial amylase plays an important role among the participants in this process. However, a number of problems in the isolation, immobilization, and production testing of bacterial amylase from local strains remain unresolved. Therefore, the demand for biologically active substances in the industry is growing, and the production of enzyme preparations from microorganisms, their use as potential sources, indicates their relevance. The application of amylase enzyme in various industries requires the creation of local technologies of enzyme production and increases cost-effectiveness.
