Structura of ferments

• Simple ferments (Pepsinum, an amylase, Trypsinum)
• Complex ferments consist of 2 parts: an apoenzyme and a coenzyme
• The apoenzyme is responsible for specificity of ferment.
• The cofactor variates tertiary structure of protein, komplementar interaction of ferment with substrate and in enzymatic reactions (donor-acceptor) carries out function of substrate.

The nomenclature of ferments

• The ferment name should include:
• - The substrate name
• - The coenzyme name
• - Phylum of catalyzed reaction
• L-laktat - NAD - an oxidoreductase
