Structura of ferments - Simple ferments (Pepsinum, an amylase, Trypsinum)
- Complex ferments consist of 2 parts: an apoenzyme and a coenzyme
- The apoenzyme is responsible for specificity of ferment.
- The cofactor variates tertiary structure of protein, komplementar interaction of ferment with substrate and in enzymatic reactions (donor-acceptor) carries out function of substrate.
