Scientists estimate that there are approximately 38.000 varieties of mushrooms. Of these, more than 700 have proven highly edible. For practical purposes, wild mushrooms break down into several categories; dangerously poisonous, slightly poisonous, disagreeable in taste, and those of excellent flavor. Just as their cousins, funguses, mushrooms too, are simple-structured and live off food already prepared by higher forms of plants. The one thing that all funguses lack is the green coloring by which green plants, with the sun's help, manufacture their own food.
