There are two basic ways that noncommercial foodservices can be operated:

They may be self-operated; that is, the organization may employ a foodservice
director and staff to manage and operate the program.

They may be operated by a contract management company; that is, the
organization may negotiate and contract with a for-profit management com-
pany to provide the foodservices for the organization.
