Guarantee (banquet):
Contractual agreement about the number of meals to be provided at a banquet. A
guarantee must be made several days in advance of the event; at that time, the banquet host agrees to
pay for the larger of the actual number of guests served or the number of guests guaranteed.
In addition to PMS reports about guestroom occupancy, the food and beverage
director will likely be interested in and request these reports:

In-house groups list
•
Short-term occupancy forecast (10-day)
•
Thirty-day occupancy forecast
Although it may seem surprising, front office personnel also play an important
role in a property’s liability in regard to dram shop law. The FOM and food and bev-
erage director must work together to develop and implement training programs on
this topic for their staffs.
