ABSTRACT 
Since, according to very numerous modern studies, significant indicators of the functionality of fatty products are the 
ratio of polyunsaturated fatty acids (PUFAs) of the ω6 and ω3 families, as well as the ratio of the sum of saturated, 
monounsaturated and polyunsaturated fatty acids (SFA:MUFA:PUFA), then issues related to fortification functional 
properties of fatty products of the target (special) purpose by combining their composition with the use of crushed full-
fat masses of oil flax and sesame seeds are the subject of this article. The theoretical substantiation of the biological 
potential of the crushed non-defatted mass of oil flax seeds as a promising component for the enrichment of PUFA group 
ɷ3 of new food vegetable-fat composite mixtures for special purposes. In the recipes of many bakery and flour confec-
tionery products, margarines are usually included as a fat component, which are often not balanced in terms of the ratio 
of ω6 and ω3 fatty acids. In this regard, before adding to the dough, it is proposed to pre-mix margarine with a non-
defatted crushed mass of oil linseed and sesame seeds without extracting oil from their composition. The fatty acid com-
positions of seeds of local varieties of flax "Bakhmalsky-2" and sesame "Tashkentsky-122" were determined for mixing 
their crushed fat-free masses with margarine, examples of calculating the ratio of these components for mixing and bal-
ancing the fatty acid composition of the fat composition for the intended purpose are given. It has been established that 
the inclusion of crushed non-fatted masses of oil flax and sesame seeds in margarine in certain ratios according to the 
calculation makes it possible to obtain compositions balanced in terms of the ratio of fatty acids ω6:ω3 and in terms of the ratio 
of the amounts of SFA:MUFA:PUFA compositions.
