In the article the questions of the vitamin defi-
ciency and polyunsaturated fatty acid in Ukraine popula- tion are considered. The analysis showed that reception of vitamin vegetable oils with good balance of fatty acids composition and stability to oxidative deterioration be- cause of natural antioxidants containing.
