70% of the assumption that only at lunchtime or in the evening there will be a full landing on weekdays, at weekends it will depend on the season. 50 seats will allow serving an average of 65 visitors per day. Theoretically, the maximum possible daily revenue from the hall will be 3 780 000 Som.
The author calculates theoretically maximum daily revenue with formula 5.1.

The total monthly revenue from the operation of the Aji restaurant accounts for 25 500 000 which comes out of 113 400 000 as monthly sales deduct all monthly costs of 87 900 000.

Analyzing these indicators, it can be argued that the main expense item is wages. Following are the costs of the purchase of raw materials.
Profit from sales amounted to 113 400 000 Som per month. The annual profit will amount to 19 645 000 Som. Profitability was 22.4 %, which is a good enough indicator for a small bar.
With a total cost of creating and developing a business of 87 900 000 Som. The restaurant will pay off in less than 1.5 years. This is a very good indicator for a small sushi bar.
Below the author provides the table of profit and loss statement for “AJI” sushi bar for the period of 2021-2023 with estimations. The first year of calculation is more suitable for reality because of today’s market price and economic condition in the country. For the following two years the author estimates costs and other expenses based on initial year price changes.
The calculation of the first-year net profit for “Aji” restaurant is based on price level of the year of 2021as well as estimation of inflation rate changes during the year. Current economic situation in Uzbekistan is not stable due to which one finds it difficult to come to most precise estimation level even for the current year. According to table 5.7 total sales volume will be around 113 400 000 Uzbek Soum (approximately 10 000 Euro) for the first year which is quite good for start-up restaurant. The yearly total cost for the restaurant will be 87 900 000 which is 77.5 % proportion of total sales. Profit before tax and interest is estimated to be 25 500 000 Uzbek Soum that is subject to be deducted from interests and taxes. Net Profit for the first year of activity is projected to be around 15 500 000 which is 17.6% of return.
